Oatmeal Raisin Cookies
(from the Silver Palate, with Marc's modifications shown in itallics)

12 tablespoons (1-1/2 sticks) sweet butter
1/2 cup granulated sugar
1 cup brown sugar

1 egg
2 tablespoons water
1 teaspoon vanilla extract

2/3 cup unbleached, all purpose flour
1 teaspoon ground cinammon
1/2 teaspoon salt
1/2 teaspoon baking soda

1/2 of a nutmeg, finely grated
3 cups rolled oats
1 cup raisins
1/2 cup (or thereabouts) walnuts, very finely ground (like breadcrumbs).

 

  1. Preheat oven to 350° F.

  2. Cream butter and both sugars. Add egg and beat thuroughly. Mix in watter and vanilla.

  3. Sift flour, cinnamon, salt baking soda. Add to the batter and mix well. Add nutmeg, oats, raisins and nuts and mix well.

  4. Form dough into balls and squash slightly onto the cookie sheet. Bake for about 15 minutes.

Basically I loved the flavor and texture of this cookie, but I wanted the oatmeal flavor to meet my expectations of being even nuttier. I sometimes substitute some whole wheat for some of the white flour.
