Tomato Dill Soup

(Silver Palette)

Melt 8 tbs butter  in pot, add 3 cups of sliced yellow onions, simmer for 20 minutes until tender.  Add 2 cloves finely minced garlic for 5 min. Until tender. Add 1/2 bunch of finely chopped dill, s&p to taste cook for addition 15 minutes.  Add 2 quarts of chicken stock + 3lbs of plum tomatoes (drained and seeded) + 1 tsp of ground allspice and pinch of sugar.  Bring to a boil and then simmer for 45 minutes. 

Add grated zest of an orange and let cool.  Pass through a blended, return to pot, add remainder of dill finely chopped, heat and serve with dollop of sour cream and sprig of dill or serve cold.

1 Bunch Of Dill (Reserve Sprigs For Garnish Mince Rest

2 Quarts Chicken Stock

3 # Plum Tomatoes, Drained And Seeded

1 Tsp Ground Allspice

I Orange (Grated Rind Only)

S&P = Pinch Of Sugar
