Mediterranean Red Snapper En Papillote

Per Serving

4 - 6 oz Red Snapper Fillet  (or other fish, sea bass etc.)

2 tsp butter

4-5 spinach leaves (washed pat dry and de-veined)

Salt & Pepper

1 tbs tomato concasse

1/4 tsp minced garlic

1-1/2 tbs red pepper diced fine

1/2 tsp thyme

1 shallot minced fine

1 tbs leak julienne fine

1/2 tsp orange zest

Preheat oven to 425 F

Cut parchment 10”x15” fold in half and cut out heart shapes (1/2 heart)

Brush with butter, Place spinach, then fish. Season fish with S&P, tomato, garlic, shallot, peppers, thyme, leek and orange zest.

Fold paper crimp and bake on cookie sheet for 10 minutes
